Rebecca 'Bex' Larsen is the Founder and CEO of Leguminati. She is a graduate of the Institute for Integrative Nutrition and a certified Holistic Health Coach with the American Association of Drugless Practitioners. She created Vegan Orlando in 2014, an online resource for vegan grub in Central Florida, when it became clear that Orlando was quickly becoming a mecca for vegan cuisine. She opened Leguminati as a mobile vegan eatery in 2015, and quit her job tending bar to keep up with the popularity and demand of her booming new business. In 2017 she took on a new partner to accommodate its rapid growth. Bex is an avid reader, vinyl enthusiast, and musical theater buff. Jeremy Joseph is Co-Owner of Leguminati. A seasoned vegan food and technology entrepreneur, Jeremy previously co-owned the popular vegan eateries Market on South, Valhalla Bakery, and Valkyrie Doughnuts. He has also founded numerous technology companies and works as consultant and software development manager in the self driving car and simulation industries. His education includes a Bachelor of Science in Computer Engineering and a Master of Science in Modeling and Simulation from the UCF, along with an in progress PhD in Modeling and Simulation from UCF. Beth Decarlo-joseph:

Beth DeCarlo-Joseph is a writer and photographer for Leguminati and Vegan Orlando. She is an experienced vegan food blogger, having written and photographed recipes for Cruelty Free Family, One Green Planet, and EatLove. Beth is  an accomplished designer, with a Bachelor of Fine Arts from the University of Central Florida. Her work has been featured throughout Central Florida, including UCF and Walt Disney World. Beth is also a passionate advocate for new mothers and cohosts a support group for Orlando mothers.
